This is a party-sized premix that is loaded full of flavours of the Christmas time, rendering it ideal for your festive gathering. Save the extra citrus syrup you can use for morning drinks, puddings, or to mix more rounds of bikinis.

The Bikini Cocktail

Serves 10 guests

Ingredients for the Clementine Syrup (produces 750ml)

300ml fresh clementine juice
200ml newly squeezed lemon juice
500g caster sugar

For the Premix (yields 850ml, serving 10)

400ml premium vodka
100ml London dry gin
150ml peach schnapps
200ml citrus syrup (see above)
A few cranberries, to garnish
Mandarin essential oil, for finishing

Directions

To prepare the Citrus Syrup: Put the listed ingredients in a pot, heat until it reaches a gentle boil, mixing so the sugar melts. Next, take off the burner and let it to cool down completely. Decant to a clean bottle, close it and refrigerate it in the refrigerator, where it will keep for around one month.

For the Batch Mix: Combine all the spirits and syrup in a big jug, leave to sit for one hour, then strain preferably using cheesecloth, so it's perfectly clear.

When ready to serve: Measure 85ml of the batch mix into a stirring glass filled with ice, gently stirring gently for about 60 seconds to chill. Strain to a cold coupe glass or a similar vessel, garnish with the cranberries adding the final touch using a light spray of mandarin oil over the drink.
